Mixed my first batch of sour dough starter a couple of days ago.  Just charged it again with a large amount of fresh ingredients. It is really looking nice. The smell is wonderful, filling the entire house with the fermentation smell. Hopefully Momma Shooter and I will make bread tomorrow or Saturday. Be ready to bake either Sunday or Monday if the days stay warm. Can't wait. Yum!

Sounds great Shooter,  love home made sour dough.  When the kids were all home, the first 4 out of the oven were gone before they could cool off.

I'm saving this post for ST, she is under the illusion that bread needs to cool first, or it will go flat when you cut it.
Bread is best, straight out of the oven, cut and smeared with butter.

Absolutely. When our loaves first come out, we lay the pans on the side to roll the loaf out, get the bread knife ( I live for the ends ) cut big slices, and butter and eat. That lady needs some educating, Solar. Nip it in the bud early.

I also like mine toasted and buttered, or with just butter and eaten cold.

And once it gets cold, in the buttered pan for a good toasting.

She's like the person that builds models with engines and hangs them from the ceiling, never to be used.
I don't think she can bear the thought of my instant destruction of her masterpiece.
And the little lady does a great job churning them out, but sadly I have to keep her in check, or my WASTE line won't be.

Fortunately I don't make it year round. Basically just during the holiday season, otherwise, I would have it stacked like cord wood. Freezer fills up pretty fast even when giving it away to family and friends.

LOL with my kids around, it would not have time to go flat.
