Clinton was widely disliked in 2016. She was polarizing. Biden, while not exciting, is not polarizing.
Clinton ran a shit campaign and ignored states that Trump ended up carrying by a small amount, dooming her bid. Biden has not done that. Trump this time is way down in those battleground states.
Trump was an unknown in 2016 insofar as independents especially, and people not excited with Clinton, were willing to give him a chance with the idea that he would mellow out. They now know he is unhinged.
Polling organizations have made every effort not to repeat any mistakes they may have made in 2016. If they felt they undercounted Trump support in 2016, they have attempted to rectify it. Polls are going to be far more accurate this time around.
