I've done both, still do.  In my front yard is a salvaged propane tank that smokes or grills - it's big enough to put a 400lb whole hog, on a rack or the spit.  We use hickory - not pellets, small logs about the size of your fist.  Off to the side of the propane tank grill, there is a 2" pipe, connecting to a 2nd small tank, which I build the smoking fire in, for cold smoking cheddar, fish or meats.  This is my 3rd or 4th smoker/grill, hopefully my LAST.

Maybe you guys can afford to buy those things, I cannot, so I just build them, as cheaply as I can.

The last smoker I had was store bought but by the time I did what was necessary to make it work as it should I may as well have built it from scratch. When i got the pellet rig I donated my old rig it to a young guy. I had made a temperature contolled stoker fan for it so it worked very well for those long smokes. All I had to do was keep it fed with fuel. I did mostly lump and chunk smoking with it.
