TV Science Fiction - Babylon 5 series... Close seconds, The Invaders and The Twlight Zone... mind bending stuff.
SiFi movie, Galaxy Quest... reminds me of several people I work with. SiFi & Comedy, unmatched hilarity!
TV Suspense - Mission Impossible. As I tell my kids, "This series popularized alligator clip jumpers, Radio Shack musta sold out of them weekly" We still watch MI.
Suspense movie - Alfred Hitchcock (anything) He had some terrific espionage movies before he did the horror genre. A very close 2nd movie series, James Bond... (wifey HATES them)
TV Western - The Wild, Wild, Wild West. Yes, gadgets and law enforcement, the perfect combination... a theme, I guess.
Western Movies - Wifey also likes anything John Wayne. ... we know a few self-described FEMINISTS... who love John Wayne. interesting...! I gravitate towards The Magnificent Seven movies, and the original Samuri Seven it's based on.
Chick-Flick movie - The Quiet Man. Wifey & I love Maureen O'Hair (she is... Scotch-Irish, and well... it brings out the .. nevermind).
Chick-Flick TV series - Little House on the Prairie. This prompted us setting up a media server, and ripping everything to it. They were wearing out the DVDs. Since then, EVERYTHING gets ripped to the server, and the DVDs are safely stored away. I flatly refuse to watch LHP ... there is nothing "romantic" about growing up on a REAL farm, it's WORK, wrought with danger, hardship & long hours in the worst possible weather. Now, I call myself, "The Farmer's Husband", and do not farm - she does that.... and looks quiet sexy at it.
TV Comedy - Get Smart. As we said, "It's so dumb, it's funny!" Don Adams is a classic. You can't watch GS and not chuckle, or say out loud, "this is SO stupid!"
Comedy movies - anything Cary Grant, the guy is a comedic genius... Leslie Nielson is funny, but in a crude kind of way. Grant is hilarious. For some strange reason, Arsenic and Old Lace is our traditional winter movie.
Musicals (movies only), anything by Rodgers & Hammerstein... Sound of Music, an honorable mention. Julie Andrews has a beautiful voice, John Kerr (Seven Brides for Seven Brothers), has a bold, towering voice... back when there was absolutely no question about the sexes. (another "winter" favorite)
Religious movies - Ben Hur and The Ten Commandments, and easy tie for the best of the best. Great acting, great script, the whole family watches both of them annually.
I dislike CGI crap the most. Roger Moore (playing Bond) exclaimed to the stuntmen, after they did the 360 degree car flip over the canal, "Thank you, you guys make me look so GOOD!!!" (He was right, you can't replace good stunt-work with CGI). The modern movies have replaced good acting, good drama with "mindless special effects". Movies should be more an just a visual experience, Hollywood turns out garbage these days.

This is why I cant stand 99% of all new movies. The only movie I have enjoyed these last 10 years or so fully is Dredd. I like The hobbit movies with the exception of The action, it is such a drag. Some of it can be good but The third movie i had checked out after The first half hour and shit it was like 3 hours of animated blurry shit. CGI can be good like Smaug was excellent.
Back to your point about stuntmen that is why The old Bond movies still hold up today and just compare The excellent emotional suspense of mad Max 2 to the kiddy rollercoaster ride of Fury Road. Sure some stunts were real but it was drowned out by the over the top CGI which ruins all suspension of disbelief and makes Even The real stunts irrelevant.
Another example is the thing and The CGI remake of it, The old one Will always stand The test of time, but The new one is already forgotten.

CGI is getting better, but... nothing I like more than real stunts, even if they resort to 'wires' or cheesy explosion setups, the closer to the real thing, the better. Of course it's dangerous, that's what adds to it. We recently watch the Hobbit series, pretty impressive stuff, but, not very believable. CGI still looks sort of transparent, like the characters (while in motion) lack the wear and tear of daily life.
Mad Max has got to be some of the most harrowing stunts - you couldn't get me on those dune buggies doing that stuff!
