How long will beef jerky last? Using glass jars and screw tight lids, how long can I count on the jerky being good?

A long time.
But if you're making your own, two factors that are the most important is, DRY, make it as dry as possible and two, the leaner the better, fat can go rancid.

So here is the thing, if you seal it in vacuum bags with those air packs and keep it in the freezer, it will keep forever.
If not frozen, anywhere from 3 months to a year plus, commercially made jerky can keep for years, I have some I bought five years ago and it's still good.

But remember, moisture is the one culprit you don't want, it gives bacteria, mold an other microbes a place to breed and salt it as much as you can tolerate, salt is not a place where microbes prosper.

I love home made jerky, but if I was keeping it for emergency reasons, I'd by commercially made jerky, they've taken extreme precautions to keep it fresh for years.
