Good for you....  Before you start you may like to check out root cellar on the net.  There a lot of good info now.  I remember have a root cellar as a kid for over 15 years.

The one I plan on building is simple cinder block and sealed from the outside with a mastic to prevent water seepage, about 6' tall 12 ' deep inward and about 6' across, then buried under 4' of Earth with a steel door.
Nothing elaborate, just a food vault.
