Ingredients:
1 pint strawberries, hulled
3 tablespoons honey
2 teaspoons fresh lemon juice, or to taste
1 1/2 sticks (3/4 cup) unsalted butter, softened
Method:
In a food processor purée the strawberries and force the purée through a fine sieve into a saucepan. Add the honey and the lemon juice and boil the mixture, stirring, for 3 minutes, or until it is thickened. Let the strawberry mixture cool to room temperature. In a bowl cream together the butter and the strawberry mixture. Let the butter stand, covered, in a cool place for 1 hour to allow the flavors to develop.
This butter is delicious, especially on whole grain bagels!
Cant wait to try it with my kinda spread ( I cant have butter anymore).

Oh yum! I bet that would work with the wild raspberries in my backyard too, they are normally so seedy that I don't touch them.

About three to seven days before they are ready to pick, water the Hell out of them and they will expand by as much as 90%.
We have black berries that don't get very big due to lack of water,, but that makes their sugar content high, so we water them for about a week then pick berries the size of your thumb. :drool:

Thanks for the tip, I will be sure to try that! I might have missed them this year, I will have to look, I admittedly ignored them after the first few years of seedy berries.

Ours are just coming in, it will be another 3 weeks.
I use the tractor and drive in to get the best ones the deer and bears can't reach easily. :laugh:
