Spice Pound Cake

4 TBsp. Brown Sugar       
2 Tsp. cinnamon
1 C sour cream  (fat free or low fat sour cream is not recommended)
1 pkg Butter Cake Mix
1/2 C sugar
3/4 C oil
4 eggs
1/2 C chopped pecans



Mix 1st 7 ingredients together, then add the chopped pecans. Bake in greased and floured (Bakers Joy works great) Tube pan or Bundt pan. Bake @ 300 for 1 hr 15 minutes.

Note~ This is a moist cake and is one of my family's favorite deserts.

(This is the best meatloaf I've ever found. If you can top it, please share yours with me.)

Tasty RoTel Meatloaf

1 lb lean ground beef
1/2 lb ground pork
1 lipton onion soup packet
10 oz original RoTel with green chilis
1 tsp salt and 1 tsp pepper
1 green bell pepper chopped
1 garlic clove minced
1 egg
1 1/2 c saltine cracker crumbs
1/3 c water

(note, if you havent the Rotel, substitute a standard 10 oz can of diced tomatoes plus 1 tsp of tobasco sauce. If you havent fresh garlic, add 1 TBsp. of garlic powder.)

Preheat oven @ 350.

Mix all above together place in loaf pan to shape and then dump in pyrex dish. Cook for 1 hour and drain off fat. Serves 6.

(note, this meatloaf is spicey, but it's delicious.)

Kay, my family liked the wine pound cake so much, I'm going to try this one over the weekend. I'll be babysitting my grandson and he loves, at his age (15 mons.) to help out in the kitchen. He'll love it, I know. I'll let you know how it goes.  :)

Awww.... 15 months old! What a cute age! One day, I will be a grandmother too. It just wont happen any time soon, I dont think. I can hardly wait though. What is your lil one's name?

Yes, the spice pound cake, it sounds so good. I can make cakes and freeze them, but this one I believe I'll serve first.  ;) Jackson Wayne (named after Stonewall Jackson and his father/grandfather) is my only son's child. You have much to look forward to when the Lord blesses you with grandchildren; the Mouse family has been truly blessed. He is a joy, even when he's being naughty, which he is learning how to be. I think the Terrible Two's have come early with this one.  ;) :))

The spice pound cake... You wont be able to freeze it, Mighty. The family wont allow that.  ;)

Well, there was no spice pound cake left to freeze.  ;D The first batch Jackson and I mixed up didn't go well, we ended up wearing it somehow... :o ....so, of course, we soldiered on and tried again, and success! I had to make another one. I made another wine pound cake for my in-laws, and it was gone before it left my MIL's house. Those two recipes are in my file, and thanks so much Kay.

Oh, and I did try the meat loaf recipe also, but substituted diced tomatoes and a dash of hot sauce for the RoTel, and it was delicious.  :D

What? You all ended up wearing the first batter mix of Spice Pound Cake?  :o  Did you blame that on the little angel? ;D
