FOCACCIA
1 1/2 c bread flour or all purpose flour. I use bread
1/4c semolina or all purpose flour
1/4 soy flour or all purpose flour.....I used all purpose all the way down.
1 pk quick rise yeast
1 TBLSPN olive oil
2 tspns salt free dried italian seasoning crumbled...I make my own...
1 tspn garlic powder...I dry n grind my own,lol.
1/4 tspn salt
1 1/4 c warm (120 to 130f) water
1 c bread flour or all purpose
olive oil spray
1 tspn dried rosemary

In a large bowl, combine 1 1/2 c bread flour, semolina, soy flour, yeast. olive oil, italian seasoning, garlic powder and salt stirring well.  Add water and stir with a sturdy spoon for 30 sec.
Gradually add some of the remaining 1 c bread flour, beating after each addition until dough starts to pull away from side of bowl. Add more flour if necessary to make dough stiff enough to handle.
Lightly flour a flat surface: turn out dough. Gradually knead in enough of the remaining flour until dough is smooth and elastic, 6 to 8 minutes,
dough should not be dry or stick to surface. You may not need all the flour, or, you may need up to 1/2 c more if dough is to sticky. Cover dough with a dish towel and let rest 10 minutes.
Lightly spray a 14"  pizza pan ( I use a cookie sheet), press dough to the edges with fingers (or until its the size ya like it to be if you're using a cookie sheet), then a very light coating of olive oil on top very light and sprinkle it with rosemary. Cover n let it rise for 30 minutes.
Bake at 375 in a preheated oven for 20 to 25 minutes or until golden brown,  cool on a rack for about 10 minutes.

I got more of em,,,,,;)

Hmmmmm I have a problme with this.

"cool on a rack for about 10 minutes."  Hot Bread does not last 5 min in my house. First both ends go then the center.

It sounds really good Elfie.  I will print and file it for a weekend.

I too will skip the soy flour.  I have a thyroid issue and they recommend no or very limited soy products.

If I remember correctly you can divide the starter and give it away and then use it.  I will have to check into that...
I use my machine. It's a bit difficult to work and make bread,,, so I use it to do the work part n then let it rise and do the rest on my own that way. It's a Handy lil sucker for me,lol. If we are not at the cabin,,,on weekends I  do it from start to finish though.... if we need some, lol

Anything you can find would be good.  If It just made the bread and 1 starter I would be fine...but 3 more???

I hope it is ok for me to add an easy bread recipe. It is one that has been in our family.

Beer Bread
3 Cups self rising flour, sifted
5 tablespoons of sugar
1 (12 ounce) can of beer
1 tablespoon of oil

Mix all and place in greased loaf pan. Bake @ 400 for 1 hour.

Let me know what you think of this easy recipe.

U_Kay...  Please add as many as you want.  I have made beer bread in the past but not this recipe.  If I can scrounge up a can of beer I will have to try it.  Plus I can use my antique sifter.   Thanks  for sharing.  ST   8) 8) 8)
