Definitely moderation, and have someone else test it, I found that my taste buds tend to get calloused to its bite while taste testing.
In other words, the first test tastes weak, so I add more, but it still tastes about the same soooo, I add a lot more, and that seems about right.

But the next day I wonder what moron added so much damn horseradish to the tater salad. :o :))

You season fine, it just is never hot enough for my tastes.
