Title: Here's a recipe to have some fun with!

The basic recipe isn't new... my mom used to make this stuff when I was a kid, back when we lived in caves and our pickup trucks ran on wood.

QuoteBAKED CORN

1 box (8.5 oz.) Jiffy Corn Muffin Mix
1/2 cup sour cream
1 stick margarine (softened)
1 can (15 oz.) whole kernel sweet corn, drained (frozen corn may be used instead)
1 can (15 oz.) cream style corn, white or yellow -- do NOT drain
1 egg

Preheat oven to 350 deg.
Combine all ingredients in a mixing bowl (an electric mixer will give a slightly smoother texture, if desired)
Place the mixture in a greased casserole dish (9" x 13" or other suitable size)
Bake uncovered for 45 min., or until a toothpick comes out clean

NOW, here's the fun part! There's nothing wrong with baked corn, the basic recipe above, as is. But I've played around with this stuff for years, and had a lot of fun in the bargain! Mostly, I've added to it. This recipe just SCREAMS for more ingredients!

A partial list of things I've added to the basic recipe:

Chunked or shredded chicken and/or turkey
Ground beef
Ground venison
Bacon (cut into small pieces)
Ground sausage
Onions (any kind, cut small)
Sweet peppers (red, green, yellow, orange, whatever)
Jalapeno peppers
Sliced mushrooms
Diced ham
Spices (I have a Jamaican Jerk blend I'm especially fond of...)
Shredded cheese (cheddar, Monterey Jack, mozzarella, provolone, etc.)
Sliced/diced pepperoni
Sweet peas

Of course, these things can be added in almost limitless combinations... use your imagination! With some extra ingredients, this is a one-dish meal!

One caveat -- if you add ingredients to the basic recipe, expect to bake it for a longer time. With a half-pound of pre-cooked meat and a few other ingredients added, it'll take more than an hour to get there...

I luv corn! I have the supplies on hand! I will let you know how I like it. I have one similar, but I think this one seems more interesting due to it's flexibility.

OH!!! I looked over my OP and noticed that I forgot to mention... Don't add ALL of that stuff to ONE batch at the SAME TIME!!!  :o :o :o (You'd need a garbage can to cook it in!  :P :P :P)

For instance, perhaps I might whip up a basic batch of baked corn, and add some shredded chicken and mushrooms and some chopped onions, with a little Jamaican Jerk for an eye-opener. Yeah!!!

T, that recipe was so easy and so much fun to make. My kids loved it. Of course, corn anything, I looooove! Hubby said it was ok, but I expected that of him.

I'm glad your young'uns enjoyed it, Kay! It's one of those dishes that I just get in the mood for every now and then, y'know?  :D

Oh, OK, tbone, you're talking about corn pudding. Duh, it took me a while to figure it out (LOL @ me!) I like putting in shredded fried chicken or even beef tips; I hadn't thought about Jamaican jerky tho, is that really good? I might try it. Thank you for sharing this.  :)
