Fluffy Baked Omelet

Preheat oven to 400F

3 eggs
3 T half and half
1/8 t seasoned salt
1/4 c each of cheese, ham, or whatever fillings you want.
   (Any veggies or meats must be cooked before adding.)
2T butter

Melt butter in  9" cast iron skillet.

Whisk eggs, half and half, and salt in mixing bowl until pale yellow and frothy.

Pour egg mixture into hot skillet to set.
Add fillings on top of egg.

Place in hot oven and reduce temp to 375.
Bake for  10 min.

Score across center of pan to make folding easier, fold omelet and slide onto plate.

Once I finally got my cast iron skillets properly seasoned, these omelets turned out wonderfully every time.

Flax oil is the best for seasoning your skillets, but I have coconut oil on hand and it is working quite well for me.

Funny - I was just seasoning two of my cast iron skillets this weekend.  I have one more and the dutch oven to get cleaned and seasoned before winter.  I use them on the wood stove..  Toy  :thumbsup:
