I recently tried this with thawed breasts in a Dutch oven on low heat and it worked really well. I added  some garlic cloves and just one stalk of celery that I diced tiny, ( *small enough to make my Aunt Lina happy) and it was wonderful with refried beans, fresh diced onions and colby over taco chips.

Gosh I love "simple".

* my Aunt Lina took dicing SERIOUSLY.
Joe was right.

I have done something similar.  Poach a couple chicken breast, shred them with a fork, throw them in a skillet with a can of Rotel and heat through.  Quick and easy.

Elfie you might like this one.  Got it off a blog I get.

Homemade taco shells.  Preheat your oven to 375 degrees.  Wrap some corn tortilla's in damp dish towel and microwave for 30-60 seconds to steam.  Lightly spray with oil (Pam) and then drape them over the racks in your oven to form a shell.  Bake 7-10 minutes.  These make nice wide flat bottomed taco shells.   Toy
