Cowboy Stew and Cornbread (both are simple to make)

Cowboy Stew

1 lb ground beef, browned and drained
1 onion chopped
2 cans diced tomatoes
2 cans creamed corn
2 cans chili with beans
1 can rotel tomatoes
1 can sliced potatoes

Place all in large pot, bring to a boil, then reduce heat and simmer for 1 hour, stirring occasionally.

Cornbread

Add a 1 and a half Tablespoons of vegetable oil in an iron skillet and place in 425 degree oven for approx 5 minutes or until skillet is very hot. (7 minutes max)

While the skillet is heating, mix the below ingredients together.

3/4 C self rising yellow cornmeal
1 T self rising flour
2 T sugar
3/4 C to 1 C buttermilk
1 egg

Pour in very hot skillet and place in 425 oven for approx 20 to 25 minutes. (When side of cornbread is golden brown, it's done.)

I forgot to mention this~  Drizzle syrup atop your left over cornbread for a yummy desert treat after the above meal.
