The wife knows how much I despise fad foods, especially ones that smell like a garbage dump on fire when cooking this crap.

People fail to understand that virtually everything on the planet is eatable in moderation, but when people focus on the odd stuff, while eliminating staples, they're asking for adverse effects.

I'm still on the cooking greens in bacon drippings fad.  :scared: One that I have cut out was using lard. It made fantastic pie crusts, cookies, I guess anything it was used on. We used to make own every year. Getting lazy now I guess.

I'd use actual lard if I could find it. I'm going back to the way man ate for centuries, Hell, we wouldn't be here if they ate the way our govt says we should.
Like I was telling the wife, doctors tell you to cut your cholesterol, but like I explained, cholesterol is like the oil gauge in your car, it's telling you there is a problem, and taking pills to control cholesterol is like fixing your oil gauge to look like everything is fine.

Too many pills, too many fad diets, time to go back and eat everything in moderation.

I cook with Lard almost every day.  In fact, the only things I fry in, are Lard, Olive Oil, Bacon Grease and Butter.
When I was real sick, I found out that cholesterol only sticks and causes clots, if there is Inflammation in the arteries.  Otherwise, cholesterol flows through your body like blood.  Harmless.
What, you may ask, causes arterial inflammation?  Sugar, Flour, Margarine, Canola Oil, etc.  So, I went on the Atkins Keto Diet.  I have used nothing but these oils, along with Avocado oil, Coconut oil, and EVOO.  Over a year, I've eaten 80% of my calories from Natural fats, and only used what many believe to be unhealthy oils, to cook with.

My total Cholesterol is 108.

The issue becomes when we refuse to eat this balance.  Eating high simple carbs, and saturated fat, is a prescription for Obesity.  It is all about insulin resistance.
Solar, I realize you may have difficulty getting Lard.  They don't like it where you live.  If you choose, let me know and I'll ship you some, if you just reimburse me.  I used to do this for my Mom, with Lard, Livermush and Country Ham.  I'd be happy to do that.

Thanks tiny, I appreciate that, but we can get it, it's just not readily available, I have to drive down to the city to get it, but it's there.
Just getting the wife used to using it will be the real challenge. :biggrin:
