Title: Christmas Baking...

I head out tomorrow for my annual "baking" weekend with my girls.  This year there is a new twist.  Since I have now converted to gluten free, alongside my older daughter who is Celiac, there will be a larger selection of gluten free goodies.  Oh yes there will be the usual traditions such as the family fudge and cream wafer cookies but we are adding GF S'mores Pinwheel and Chex Scotcheroos.  This year I am also going to teach them how to make my enchiladas (including the sauce from scratch) and pozole. 

I am looking forward to a great time hanging out and cooking alongside my girls and their husband and fiancee.

We really outdid ourselves this year. 4 types of chocolate chip cookies, cream wafers (3 batches), chex scotcheroos, S'Mores pinwheel, sugar cookies, maple walnuts and pecans, fudge, peanut butter fudge, butter-cream fudge, muddy buddy...  And then we finished up with making homemade enchiladas complete with homemade sauce.

Wow, you're putting me to shame - while I have made some sugar cookies, gingerbread, your spread puts me to shame. The food looks great, bet it was a lot of fun to do. You all look great as well, thanks for the thread.

We seem to get more and more each year.  Funny thing is that over 2/3's of this we give away.   Solar is not a big sweet eater and after tasting throughout the baking I am sugared out as well.  So I will leave a couple of things here at the house for Solar but the rest is going to work and friends.

The afternoon/evening before our baking day(s) I popped in early and made homemade Pasta Fagoli and Pozole for dinner. 

And then after this was divided up on Saturday I showed my oldest daughter and her husband how to make homemade enchilada sauce and enchilada's.  They had dinner, Solar had dinner, and they put one in the freezer.

Someday when I finally retire there will so much more cooking from scratch...
