Title: Bert, need A Recipe

I'm not sure you're into Mexican foods , but I want a good recipe for Spanish rice.

When I was a kid, the Mexican lady across the street made some, and I was in Heaven, but after all these years, I've yet to come across the rich flavor she created, all the others seem to have 20% the flavor.

The problem is, I have no idea what is missing, so I was wondering if you knew any variations on the recipe.

Good luck Bert as I think there are over 3.000.000 ways of making Spanish Rice.

You're in luck. I have been cooking Mexican, Cuban, Puerto Rican, and Jamaican cuisine for years. They all do Spanish Rice. I'll dig through my notes and post it.

Actually I'm a very good cook, but when we met, she said the kitchen was hers, so who am I to argue? ::) ;D

Nah, you have no idea just how much I like Spanish rice.
It is probably number one,if not one of my favorite dishes, that and stuffed bell peppers.

Since I live in a part of the world where rice is the staple food, I know lots of ways to cook it. If you want "spanish style rice" here is a version, you fry it in a wok, smother it with tomato sauce, add little "Pik ee noo" peppers (small red thai chili's) and some chopped green bell peppers, put in a little pre fried pork, beef or chicken, you can add onions but I don't like 'em, make sure you use sunflower oil.
add some "hot sauce" and make sure you got lots of water.

I also make something called Arroz con carne & frejoles (Rice, meat and beans) stir fry hamburger bits in tomato sauce, add red kidney beans ,chopped tomato, bell peppers, chopped black olives, basil and oregano (a pinch,) some black pepper, plain white rice from a rice cooker, stir and serve. You can make it hot with chili sauce.

make sure you got lots of water, or milk, your mouth will be o fire, you can tone it down it you don;t like hot food.

If you leave out the tomato sauce and add more oil you will have Thai or Malay style stir fried rice, get some lemon and it squeeze over it before serving.

Can be prepared in 40 minutes or less. One of my mother's signature dishes is her Spanish rice, a delicious accompaniment to steak, chicken, and Mexican entrees such as tacos or enchiladas. Spanish rice is prepared by browning the rice first with onions and garlic, before cooking it in chicken broth with added tomato. The browning is essential to the nutty, almost toasty flavor of the rice. And although bouillon can be substituted for the chicken stock, nothing beats homemade chicken stock, the rich flavor of which is absorbed by the rice.

2 tablespoons olive oil (can use up to 1/4 cup)
1 onion, chopped fine
1 garlic clove, minced
2 cups of medium or long-grain white rice
3 cups chicken stock (or vegetable stock if vegetarian)
1 heaping tablespoon tomato paste or 1 cup of diced fresh or cooked tomatoes
Pinch of oregano
1 teaspoon salt

In a large skillet brown rice in olive oil, medium/high heat. Add onion and garlic. Cook onion rice mixture, stirring frequently, about 4 minutes, or until onions are softened.

In a separate sauce pan bring stock to a simmer. Add tomato sauce, oregano, and salt. Add rice to broth. Bring to a simmer. Cover. Lower heat and cook 15-25 minutes, depending on the type of rice and the instructions on the rice package. Turn off heat and let sit for 5 minutes.
