Bert, need A Recipe

I'm not sure you're into Mexican foods , but I want a good recipe for Spanish rice.

When I was a kid, the Mexican lady across the street made some, and I was in Heaven, but after all these years, I've yet to come across the rich flavor she created, all the others seem to have 20% the flavor.

The problem is, I have no idea what is missing, so I was wondering if you knew any variations on the recipe.

You're in luck. I have been cooking Mexican, Cuban, Puerto Rican, and Jamaican cuisine for years. They all do Spanish Rice. I'll dig through my notes and post it.

Actually I'm a very good cook, but when we met, she said the kitchen was hers, so who am I to argue? ::) ;D

Nah, you have no idea just how much I like Spanish rice.
It is probably number one,if not one of my favorite dishes, that and stuffed bell peppers.

Since I live in a part of the world where rice is the staple food, I know lots of ways to cook it. If you want "spanish style rice" here is a version, you fry it in a wok, smother it with tomato sauce, add little "Pik ee noo" peppers (small red thai chili's) and some chopped green bell peppers, put in a little pre fried pork, beef or chicken, you can add onions but I don't like 'em, make sure you use sunflower oil.
add some "hot sauce" and make sure you got lots of water.

I also make something called Arroz con carne & frejoles (Rice, meat and beans) stir fry hamburger bits in tomato sauce, add red kidney beans ,chopped tomato, bell peppers, chopped black olives, basil and oregano (a pinch,) some black pepper, plain white rice from a rice cooker, stir and serve. You can make it hot with chili sauce.
